Ginger Fennel Spring Tea

If you’re feeling heavy and dull, give your digestive fire a little boost.

Fresh ginger and fennel seed do the work of stoking digestive fire and promoting heat and movement.

Try this simple digestive tea to get things moving. I make a hot pot in the morning and store in a thermos to sip throughout the day...

GINGER FENNEL TEA
2 tbsp fennel seeds
1 tbsp ginger root, finely chopped
5 cups water
Optional: squeeze of lemon juice or raw honey

In a small pot, bring water to a boil.

Add the fennel and ginger.

Simmer on medium heat for 5 minutes.

Turn off heat, cover and allow to steep for another 5 minutes.

Remove from heat, strain the liquid and discard the pulp.

Stir in fresh lemon juice at the end.

Sip hot, or store in a thermos and enjoy between meals. If sweetening with raw honey, wait until the tea has cooled a bit to stir in and is not piping hot.
