PUFAs - What are they?

In the presence of heat and oxygen the double bonds break and from a free radical.

Free radicals create cell damage – this is called lipid peroxidation.

This can lead to heart disease, rheumatoid arthritis, Alzheimer, autoimmune diseases and other chronic imbalances.
